Sundaes with Mexican Hot Fudge Sauce and Coconut

We are in the middle of updating our kitchen (I'll post before and after photos here when we're done) and I had friends over last night so I was looking for a quick dessert that didn't require lots of pots and pans, the oven, etc.

I made this recipe (but didn't bother making the ice cream balls, I just scooped the ice cream). I made the toasted cinnamon coconut in the microwave--I just cooked it on high a minute at a time, stirring in between, until it was toasted)....

...then I drizzled with this recipe for hot fudge sauce also made in the microwave. I substituted 8 ounces of chopped Ibarra chocolate for the semisweet chocolate and I let the sauce cool to thicken it. They were very yummy.

YUM! Nothing like hot fudge -- and Mexican hot fudge. Even better.

I'm always meaning to buy coconut, but then forget to. What a good addition to ice cream, not to mention lots of other foods, especially yogurt or oatmeal.
