Simple Cashew Chicken

Move over Chinese takeout. I tried this recipe last night and we loved it. I added three stalks of sliced celery and an 8 ounce can of water chestnuts (chopped) along with the green onions for some extra veggies. And I only used a couple of cloves of garlic rather than six. Next time I make it I think I'll double the hoisin sauce/water mixture to make it a little saucier but I ran out of hoisin last night. I love it when an uncomplicated recipe is so yummy.

Yum. I adore cashew chicken. At least I did before I moved to SW Missouri, and they have a TOTALLY different version - deep fried pieces with some brown sauce, no vegies, icky. So nice to have a recipe for the "real" thing! I'll be putting this on the menu for this week. Thanks!!

It's so funny what your first poster said about the cashew chicken in SW MO. I grew up eating it (called Springfield cashew chicken) and have always loved it! When my favorite Chinese rest. closed, I was lost with out it. WHen I saw this recipe, I thought it was probably the most similar to that dish, and I tried it and LOVED it! It's now going to be a new regular at our house :)
